Baked Eggs

Baked Eggs
Ingredients

3 fresh, free range eggs

2oz/50g butter

2 slices prosciutto (or 2oz/50g cooked spinach)

4 Tbsp double cream

Freshly ground salt and pepper

Ciabatta bread

Serves 2

Preheat the oven to 180 degrees.

First melt the butter in an oven-proof dish. Lay the prosciutto (or spinach) in the bottom of the dish. Break over the eggs. Add the double cream and season to taste. Return the dish to the oven for between 8-10 minutes until the egg whites are set and the yolk is yielding. Serve with the toasted ciabatta.

Makes a perfect supper dish for two.

Yummy! I linked to your Baked Eggs recipe from your blog, "Food, Glorious, Food!" and I cannot wait to try it. I grew up poor, just outside another Cornwall -- Cornwall, Pennsylvania, and one staple we were always lucky enough to have was eggs. I love eggs, too! In the US, eggs are traditionally eaten for breakfast, but I enjoy eating eggs any time of the day, and this is a recipe that I am sure to try soon; thank you for sharing!

Just to add to my previous comment above, I've just made this with a base of Ham Hock and extra mature cheddar cheese and a leaf base of spinach.

Just gorgeous! Lovely Christmas Eve lunch with toasted bread (sadly no ciabatta in the house but Aga toast is scrumptious anyway).

Delicious! I used kale for my foundation. I love eggs and so rarely eat them outside of traditional American breakfast dishes.

Thank you for the recipe. I love eggs for any meal and enjoyed trying this recipe (I make variations of it depending on what ingredients I have on hand). I've introduced my family to baked eggs...don't know anyone else who prepares them that way...and they are loving them too.

Or you can use single cream - I tend to use what I have as it is often a supper dish on a night when I have not planned or bought much!!!

Very happy to hear it! They are delicious and a great supper fall back option - another thought is to pan fry some chopped mushrooms in a little butter so they are soft and then tip them into the bottom of the ramekin or larger dish before you crack in the eggs.

is double cream the same as whipping cream? also was that 180 Celsius? what is that in Fahrenheit?

Yes Patsy, it can be tricky to find double cream outside the UK so can be substituted for whipping cream or heavy cream. It is in Celsius, which would be 350F (medium-hot oven)

Delicious! I am allergic to dairy so I used nondairy butter and dairy free coffee creamer. I also used both spinach and prosciutto because we love both.

I do have a question, though. At 180 degrees, my eggs were not cooking. I had to raise it to 300. I used an oven-proof frying pan. Should I have used a ramekin in a water-filled pan?

It probably takes longer in a bigger pan compared to the smaller ramekin. The water in the pan in which the ramekins sit help distribute the heat so the eggs cook evenly. Whilst I am the multi-muddling wife taking shortcuts in haste, funnily enough I do always put the eggs in a dish in a pan with water half way up...

I have bought some new ones and they are just over 3" diameter. You can if you want easily put two eggs in one ramekin dish or add a little spinach at the bottom. I am something of a "store cupboard" or seasonal cook ..I learn every time I vary it!

This evening, I watched a PBS presentation about Highclere with you and (I think) Mary Berry. You two rode about the estate on horses and then toured some of Highclere"s interiors. I have been reading your blogs which are very interesting and enjoyable. Then I came to your recipes and the one for baked eggs was my favorite. I plan to do this later today as each ingredients is available here in Alabama. The amount of pepper is perfect and I use kosher salt. Thank you for sharing.

I plan to make these next weekend for houseguests. Is the temperature in Celsius or Fahrenheit? 180 degrees seems a bit low for Fahrenheit.

After reading about Mary Berry's visit to Highclere, I subscribed to the channel to be able to watch her visit to Highclere. It was wonderful. Simply wonderful!
My question is this; I tried to write down the recipes , but the measurements are different. I tried to google the exchange, but I was not successful. Can you tell me how to convert a mil to a measurement I might understand, please? I want to make the Raspberry Tarts for a Tea we are planning.

I like this recipe and will make it tomorrow for
breakfast. Spinach, sauteed mushrooms, eggs, tarragon, cream, with a little sharp cheddar .
Water bath , cook for 8 ? minutes.

Hello from Australia Lady Carnarvon

I love Baked Eggs although my children balked at them until I "renamed" them Cackleberries :) Although my girls are grown up with families of their own the name Cackleberries has stuck and I now hear that word from my grandchildren. I guess we all have our own traditions :)
You live in a lovely home which I would dearly love to visit however at 82 I
am afraid my travelling days are over as I don't walk very well now. I did love seeing Mary Berry at Highclere and of course the wonderful Downton Abbey, both of which gave me some insight into the beauty which surrounds you every day.

Just did the recipe out here in Pittsburgh. Found this blog after binging that tv show. Eating it now with toasted thin bagels. When I put the bagels in the air fryer, I was worried that I didn’t put butter on them. That was not a valid worry, lol.

It looks wonderful. I've never had eggs like that but I know my father would love them and he had a style of cooking like this dish. No doubt his family brought dishes like this from Europe but as an American, I've not had a chance to try something like this and will be pleased to make this as a wholesome family dish.

Hi Carol, I encountered the same thing. The 180 is Celsius, which is 356 Fahrenheit. It turned out wonderfully (I to used prosciutto and spinach) I’ll be making this again!

This is probably the silliest question but....

How do you eat it with the bread/toast?

The video ended too soon to show such a thing.

Do you scoop it onto the toast or dip the toast?

I like both ideas but my husband is more of a get a big spoonful and eat it.

I am making it no matter what way I might eat it... or husband.
